Here is a recipe for making chicken gravy

Chicken gravy is a rich, lip-smacking gravy to be enjoyed with rice, roti, or mashed potatoes.

So, here goes the recipe:


Ingredients:

  • • Chicken – 500g
  • • Onions – 2 large, chopped
  • • Tomatoes – 2 large, chopped
  • • Ginger-garlic paste – 1 tbsp
  • • Curd – 1/2 cup
  • • Oil/Ghee – 3 tbsp
  • • Bay leaves – 2
  • • Cinnamon stick – 1 small piece
  • • Cloves – 3-4
  • • Green cardamom – 2
  • • Cumin seeds
  • Coriander powder: 1 tbsp
  • Cumin powder: 1 tsp
  • Garam masala: 1/2 tsp
  • Kasuri methi (dried fenugreek leaves): 1 tsp
  • Salt: to taste
  • Water or Chicken broth: 1-2 cups
  • Fresh cilantro: chopped, to garnish

Instructions:

  • Marinate the Chicken
  • In a bowl, mix the chicken pieces with yogurt, turmeric powder, red chili powder, and a pinch of salt.
  • Marinate for at least 30 minutes. (You can marinate it overnight for better taste.)
  • Prepare the Base:
  • Heat oil or ghee in a large pan or pot.
  • Add cumin seeds, bay leaves, cinnamon stick, cloves, and cardamom. Sauté for a few seconds until aromatic.
  • Add the finely chopped onions and cook until golden brown.
  • Add the ginger-garlic paste and cook till the raw smell disappears.

Cook the Tomatoes :

  • Add the tomato puree to the pan and cook till the oil starts separating from the masala.
  • saute in between to avoid sticking.

Add Spices :

  • To this, also put coriander powder, cumin powder, and salt to taste. Sauté for a minute and keep stirring.

Cook the Chicken:

  • Add marinated chicken pieces to the pan.
  • Cook on medium flame until the chicken changes color and gets half done (for 5-7 minutes).
  • Stir continuously to mix the masala and coat the chicken with the masala.

Simmer the Gravy:

  • Pour in water or chicken broth to the consistency you want.
  • Let it boil, then reduce the flame and cover it.
  • Now allow it to simmer for say 20-25 minutes or till the chicken is done and the meat is tender. Stir it every 2 minutes.

Final Flavouring:

  • Now the chicken will be perfectly tender and soft. Sprinkle garam masala and kasuri methi on the gravy.
  • Do give a good stir to it. It should be cooked for 2-3 more minutes before getting that nice finish. Garnishing and Serving
  • Switch off the flame and garnish it using freshly chopped cilantro.
  • Serve hot over rice, roti, naan, or whatever is your favorite bread.
